Is Eating Burned Food Bad for You?

So, you burned the toast. Beyond a kind of culinary black eye, do you need to worry about the health risk of ingesting charred bread? The question stems from recent research studies noting that high levels of the chemical acrylamide have been linked to cancer in laboratory animals. Acrylamide forms in some foods—particularly grains and starches—during certain types of high-temperature cooking, such as frying, roasting, baking, toasting. Basically, it's a reaction that occurs from the sugars and an amino acid that are naturally present in the food when cooked at a very high temperature. Thus, putting burned (as opposed to light brown) toast in the spotlight.

It's important to note that the high levels of acrylamide used in research studies were much greater than those found in human food. While the U.S. Food and Drug Administration (FDA) does not identify a specific maximum recommended level for acrylamide, it has been actively investigating the effects of it. It also offers guidance on a range of ways to reduce acrylamide levels. No one is suggesting a ban on toast or potatoes. Starches and grains are part of a regular diet. Given the widespread presence of acrylamide in foods, it isn't feasible or necessary to completely eliminate it from one's diet, says FDA chemist Lauren Robin. What's more, the FDA notes that removing any one or two foods from your diet would not have a significant effect on overall exposure to acrylamide. It also does not recommend reducing intake of healthful whole grain foods.


How to Eat Less Acrylamide

According to the FDA, there are some steps you can take to help decrease the amount of acrylamide you eat. (On March 1, 2016, the FDA also posted a final document with practical strategies to help growers, manufacturers, and food service operators lower the amount of acrylamide in foods associated with higher levels of the chemical.) For one, acrylamide is not typically associated with meat, dairy, seafood products, or raw plant-based foods. Boiling and steaming foods do not typically form acrylamide.

For foods where acrylamide is likely to form, the FDA has clear recommendations: When it comes to enjoy toast with breakfast, they say bread should be toasted to a light brown color rather than a dark brown color. Avoid very brown areas. They suggest against storing potatoes in the refrigerator, which can increase acrylamide during cooking. Keep potatoes in a dark, cool place, such as a pantry. Cook cut potato products such as frozen French fries to a golden yellow color rather than a brown color. Brown areas tend to contain more acrylamide.


Fry Less and Eat a Healthier Diet

Regarding cooking methods, frying causes acrylamide formation. If frying frozen fries, follow manufacturers' recommendations on time and temperature and avoid overcooking, heavy crisping, or burning. Cutting down on certain fried foods has the added benefit of helping to maintain a healthy diet in general, while also helping to cut down on the amount of acrylamide you eat. The FDA's best advice for consumers to help limit acrylamide intake is to adopt a healthy eating plan, consistent with the Dietary Guidelines for Americans, that emphasizes fruits, vegetables, whole grains, fat-free or low-fat milk and milk products, lean meats, poultry, fish, beans, eggs, nuts, and limited amounts of saturated fats, trans fats, cholesterol, salt, and added sugars.

9 Food Ingredients to Avoid

As wise consumers, we know how to compare prices and save on money, but do we know what we actually put in our body? While food manufacturers must provide a list of ingredients on the packaging, they tend to use terms that can fool us into thinking we’re buying something healthy when it’s actually far from it. Next time you go grocery shopping, remember these 9 ingredients that you should absolutely avoid.

1. Completely / Partially Hydrogenated Oil
Hydrogenated oil is a vegetable oil that was hardened by adding trans fats in order to extend its lifespan. It is most commonly found in industrial baked goods, such as cookies and biscuits, as well as in margarine. Several studies have showed a connection between the trans fats in hydrogenated fat and a higher risk of heart disease, accelerated arterial blockage, raised blood pressure and higher LDL cholesterol. In many cases, the trans fats were replaced with coconut or palm oils, but these are not healthy either, thanks to their high content of saturated fats.


2. Phosphoric Acid

Phosphoric acid is used in creating salts, increasing the water content of meat products, and is also used in soft drinks. It is also used in cleaners and detergents as well as rust and plaque removers. When it comes to our body, this acid can wreak havoc on our hard tissues – it erodes the enamel in our teeth and reduces bone density. We highly recommend that you avoid any product that contains this ingredient.

3. Potassium Bromate

Our warning regarding this ingredient can be confusing, as potassium is recommended for consumption, but potassium bromate is a different substance. It’s a chemical that is used in industrial production of bread to make it rise and stabilize it. In the European Union, it is illegal to add it to any food. Potassium bromate causes nausea, vomiting, stomachaches, and diarrhea. Adding it to bread destroys the vitamin E content in it. It’s very common in plain white bread, so make sure you read the ingredients before purchasing a loaf. 


4. Sodium

Most people think that sodium refers to salt, but only sea salt is healthy for consumption, while plain sodium is a plain white salt that is free of minerals. The maximum recommended amount for daily consumption of sodium is 2.4 grams, but children ages 7-18 shouldn’t have more than 1.2 grams, and children 6 and under shouldn’t have more than 0.7 grams a day. Exceeding these amounts can lead to kidney failure, cardiovascular diseases, and even strokes.

5. Acrylamide

Acrylamide is essential in the construction of paper, plastic, and paint products. Researchers found that it could appear in certain foods that were heated to over 120°C (248°F), including fries and bread. Inside the body, this chemical causes irritation in the mucosa membranes, can damage the nervous system, and is even suspected to be a carcinogen.

6. Artificial Coloring

We all know that artificial colorings are added to our food, and many people are probably aware of their potential harm, but until you can spot them, this knowledge won’t do you much good. Food colorings are marked with the letter ‘E’, and a number between 100 and 199. E124 is known to exacerbate hyperactivity in children, E142 was found to be a carcinogen, and you should avoid any yellow, blue, and silver colors altogether.


7. Monosodium Glutamate (MSG)
Hearing the name ‘monosodium glutamate’ or “MSG” is often a warning sign, but it is widely used in the food industry. It’s very common in processed foods, powders, canned goods and premade sauces. Consuming more than 3 grams of MSG on an empty stomach can damage the nervous system. It appears under other names, such as:

    Sodium 2-aminopentanedioate
    Glutamic acid, monosodium salt, monohydrate
    L-Glutamic acid, monosodium salt, monohydrate
    L-Monosodium glutamate monohydrate
    Monosodium L-glutamate monohydrate
    MSG monohydrate
    Sodium glutamate monohydrate
   

8. High Fructose Corn Syrup (HFCS)
This is a liquid form of sugar that is extracted from corn and has almost no nutritional value. HFCS is very cheap to produce, making it the preferred sweetener for many manufacturers. The American FDA found that HFCS contains mercury, which can interrupt nerve signals. Nutritionists and physicians around the world recommend abstaining from HFCS in all its forms. It’s often found in ketchup, cereals, barbecue sauce, energy bars, ice creams, and many other products.


9. Sodium Nitrate

This substance is mostly used in the meat industry, as it gives the meat a redder color. Research shows a direct correlation between high levels of sodium nitrate and developments of Alzheimer’s, diabetes, and Parkinson’s. It is believed that the cause is that sodium nitrate damages the structure of DNA. Furthermore, it is also linked to gastric, esophageal, and colon cancers, and should be avoided entirely.

Top five cancer-causing foods you might be consuming everyday

What if your staple diet contains carcinogens, but you keep consuming them daily without realising it? Perhaps, the consequences of daily consumption of these foods can be deadly as it can deplete your body’s natural defense mechanism against foreign particles.

While millions of people are being diagnosed with some type of cancer every year, it’s time we took note of our lifestyles, including eating habits, to avoid falling victim to this dreaded disease. A number of studies have linked certain foods to cancer in addition to other health problems such as heart disease, obesity and diabetes. Here is a list of foods that you probably consume every day without realising that they may contain cancer-causing chemicals:

Canned foods
You may have to avoid this category because most canned goods, such as canned tomatoes, are lined with a chemical called bisphenol-A (BPA), which has been shown to genetically alter the brain cells of rats, and may cause cancer in people. Tomatoes being highly acidic are exceptionally dangerous and can cause BPA to leech from the lining of the can into the tomatoes themselves.

Potato chips

You might love the taste of crunchy potato chips, but they are high in fat and calories, both of which contribute to unintended weight gain. Potato chips and French fries also contain higher levels of acrylamide - a known carcinogen that is found in cigarettes - compared with other foods.

Processed and red meats

The World Health Organisation (WHO) classified processed meat as Group 1, carcinogenic to humans and red meat as Group 2A, probably carcinogenic to humans.

It said that in the case of processed meat, the classification is based on sufficient evidence from epidemiological studies that eating processed meat causes colorectal cancer. Whereas, in the case of red meat, the classification is based on limited evidence from epidemiological studies showing positive associations between eating red meat and developing colorectal cancer as well as strong mechanistic evidence.

All mammalian muscle meat, including, beef, veal, pork, lamb, mutton, horse, and goat are classified as red meat. Processed meats include hot dogs, sausages, bacon, and most lunch meats.

Microwave popcorn

Microwave popcorn contains chemicals that can increase your risk of cancer. The culprit here isn’t the popcorn itself, but it is the chemically-lined bag. Microwave popcorn bags are lined with a chemical known as perfluoro-octanoic acid (or PFOA) that has been linked to an increased risk of liver, bladder, kidney, and testicular cancer in humans. In addition, a study from the University of California linked this toxin to infertility in women.

Hydrogenated oils

Hydrogenated oils, also known as trans fats, are linked to heart disease, immune system deficiency, and cancer. These are vegetable oils that have been processed by creating a chemical reaction with hydrogen - to increase the shelf life of the oil. Margarine is an example of complete hydrogenation. Replacing hydrogenated oils with olive oil, coconut, or grapeseed oil in your diet is a great way to help you live a healthier, happier life.

WHY FRIED CARBOHYDRATES ARE BAD FOR HEALTH? - FRENCH FRIES ETC.

When a carbohydrate is fried like French fries or potato chips, a neurotoxic chemical called acrylamide is created in the frying process. Acrylamide  is also found in cigarette smoke. Acrylamide has been linked to kidney, endometrial, ovarian & breast cancer.
