Is Eating Burned Food Bad for You?

So, you burned the toast. Beyond a kind of culinary black eye, do you need to worry about the health risk of ingesting charred bread? The question stems from recent research studies noting that high levels of the chemical acrylamide have been linked to cancer in laboratory animals. Acrylamide forms in some foods—particularly grains and starches—during certain types of high-temperature cooking, such as frying, roasting, baking, toasting. Basically, it's a reaction that occurs from the sugars and an amino acid that are naturally present in the food when cooked at a very high temperature. Thus, putting burned (as opposed to light brown) toast in the spotlight.

It's important to note that the high levels of acrylamide used in research studies were much greater than those found in human food. While the U.S. Food and Drug Administration (FDA) does not identify a specific maximum recommended level for acrylamide, it has been actively investigating the effects of it. It also offers guidance on a range of ways to reduce acrylamide levels. No one is suggesting a ban on toast or potatoes. Starches and grains are part of a regular diet. Given the widespread presence of acrylamide in foods, it isn't feasible or necessary to completely eliminate it from one's diet, says FDA chemist Lauren Robin. What's more, the FDA notes that removing any one or two foods from your diet would not have a significant effect on overall exposure to acrylamide. It also does not recommend reducing intake of healthful whole grain foods.


How to Eat Less Acrylamide

According to the FDA, there are some steps you can take to help decrease the amount of acrylamide you eat. (On March 1, 2016, the FDA also posted a final document with practical strategies to help growers, manufacturers, and food service operators lower the amount of acrylamide in foods associated with higher levels of the chemical.) For one, acrylamide is not typically associated with meat, dairy, seafood products, or raw plant-based foods. Boiling and steaming foods do not typically form acrylamide.

For foods where acrylamide is likely to form, the FDA has clear recommendations: When it comes to enjoy toast with breakfast, they say bread should be toasted to a light brown color rather than a dark brown color. Avoid very brown areas. They suggest against storing potatoes in the refrigerator, which can increase acrylamide during cooking. Keep potatoes in a dark, cool place, such as a pantry. Cook cut potato products such as frozen French fries to a golden yellow color rather than a brown color. Brown areas tend to contain more acrylamide.


Fry Less and Eat a Healthier Diet

Regarding cooking methods, frying causes acrylamide formation. If frying frozen fries, follow manufacturers' recommendations on time and temperature and avoid overcooking, heavy crisping, or burning. Cutting down on certain fried foods has the added benefit of helping to maintain a healthy diet in general, while also helping to cut down on the amount of acrylamide you eat. The FDA's best advice for consumers to help limit acrylamide intake is to adopt a healthy eating plan, consistent with the Dietary Guidelines for Americans, that emphasizes fruits, vegetables, whole grains, fat-free or low-fat milk and milk products, lean meats, poultry, fish, beans, eggs, nuts, and limited amounts of saturated fats, trans fats, cholesterol, salt, and added sugars.

Insomnia symptoms linked to cardiovasccular diseases

Less or troubled sleep can lead to stroke, heart attack or other cerebrovascular or cardiovascular diseases claims a new study.

The results suggests that if we can target people who are having trouble sleeping with behavioural therapies, it is possible that we could reduce the number of cases of stroke, heart attack and other diseases later down the line, said the author.


The study involved 487,200 people in China, with an average age of 51 . Participants had no history of stroke or heart disease at the beginning of the study.


Participants were asked if they had any of the 3 symptoms of insomnia at least 3 days per week- trouble falling asleep, or staying asleep, or waking up too early in the morning, or trouble staying focused during the day due to poor sleep.


A total of 11 % of the people had difficulty falling asleep or staying asleep' 10 % reported waking up too early, and 2 % had trouble staying focused during the day due to poor sleep.


The researchers did not determine if the people met the full definition of insomnia.


The people were then followed for an average of about 10 years. During that time, there were 130,032 cases of stroke, heart attack and other similar diseases.


People who had all 3 symptoms of insomnia were 18 % more likely to develop these diseases than people who did not have any symptoms.


The researchers adjusted for other factors that could affect the risk of stroke or heart disease including alcohol use, smoking and level of physical activity.


People who had trouble falling asleep or staying asleep were 9 % more likely to develop stroke or heart disease than people who did not have this trouble.


Of the 55,127 people who had this symptom, 17,650 or 32 %, had a stroke or heart disease, compared to 112,382 or 26 %, of the 432,073 people who did npt have this symptom of insomnia.


People who woke up too early in the morning and could not get back to sleep were 7 % more likely to develop these diseases than people who did not have that problem.


And people who reported that they had trouble staying focused during the day due to poor sleep were 13 % more likely to develop these diseases than people who did not have that symptom.


The link between insomnia symptoms and these diseases was even stronger in younger adults and people who did not have high blood pressure at the start of the study, so future research should look especially at early detection and interventions aimed at these groups, he said.

The author noted that the study doesn't show cause and effect between the insomnia symptoms and stroke and heart disease. It only shows an association.

Sugar in fruit juice is linked to a higher cancer risk


Drinking soda doesn’t just threaten to make us fat, it could be linked to a higher risk of cancer, judging from a new study. But here’s the more surprising part: so could fruit juices.

Increased daily consumption of about 3.4 ounces of soda -- roughly a third of a can of a soft drink -- was associated with an 18% greater risk of some cancers in a study published recently. The likelihood of breast tumors alone rose even more, by 22%. When people drank the same amount of unsweetened fruit juice, they were also more likely to develop cancer, the researchers found.

The research, part of a broader effort carried out in France to investigate links between nutrition and health, is one of the first to find a connection between sweet drinks and cancer The findings may also taint the image of fruit juices, which are often perceived -- and promoted -- as healthy.

“All beverages -- either with sugar or without -- are safe to consume as part of a balanced diet,” the American Beverage Association said in a statement. Beverage companies are working to provide more choices with reduced or no sugar, smaller package sizes and clear calorie information, the industry group said.

The researchers tracked 97 beverages and 12 artificially sweetened ones, including carbonated ones, sports drinks, syrups and pure fruit juices. The correlations they found don’t necessarily mean the beverages alone lead to cancer. The study didn’t seek to understand the reason for the link, though the researchers speculated that sugar’s effect on visceral fat, blood-sugar levels and inflammation may play a role. Additives found in sodas and pesticides in fruit could also have an impact, they wrote.

The study found no increased cancer risk from sugar-free drinks, although so few of the people studied consumed them that the results may not be significant, the researchers said. Water, unsweetened tea and coffee also showed no heightened risk.

Congenital Heart Disease Directly Linked to Cancer in Young Patients

Many contemporary discussions on our collective human fight against cancer center on the significance of genetics as related to the onset of this hydra-headed disease.

Swedish researchers have recently established a clear connection between congenital heart disease (CHD) and the risk of cancer development in a controlled study of thousands of children and young adults.

Utilizing data from the national Swedish Patient and Cause of Death Registers to pair subjects with CHD from 1970-1993 with subjects of the same birth year, gender and county without CHD revealed a wealth of comorbidity for those with the genetic heart defect and cancers of varying kinds.

Arguably the most disconcerting piece of evidence yielded in this study suggests that the risk of cancer for the most current birth cohort with CHD remains significantly higher than those observed in older cohorts.

Some of this discrepancy is attributed to the early mortality rates of older CHD cohorts due to noteworthy lacks in medical advancement associated with those times. Many CHD patients in the older cohorts simply did not survive CHD long enough to get cancer.

This study represents the first to probe the long-range occurrence of cancer from birth to 41 years of age in participants with any kind of CHD where surgery was a non-factor. Amid the persistent discussion in the world community of cardiologists about whether the prolonged exposure to ionizing radiation associated with most heart surgeries increases the likelihood of cancer in surgery patients, these recent findings support the notion that cardiac catheterization can be a heavy, but not independent, influence.

Patients who had received a full heart transplant seemed to fare the worst in these new statistics, a fact which encourages the study's conclusion that multifactorial stress and clinical exposure components underly much of the atypically high cancer prevalence in CHD patients. Alongside the obvious stresses of the consistent medical imposition posed by a life with CHD, this study further explicates the impact of the natural limitations associated with the disease as relates to cancer susceptibility.

Commonly offered cancer-preventative advice, such as eating a healthy diet and increasing exercise, given to otherwise healthy individuals can be nearly impossible to apply to the realities of the reduced oxygen intake, lower isotonic muscle tone and greater exercise-intolerance experienced by the typical CHD patient.

With their relative vulnerability to cancer representing twice that of a non-CHD patient, the findings surrounding these Swedish children and young adults suggest that a much more in-depth look at the connections between palliative treatments and procedures concerning all groups is both requisite and urgent.
