3 Delicious Ways to Eat More Immunity-Boosting Vitamin C

With coronavirus on the rise and regular cold and flu season concerns in full force, you're likely thinking about ways to strengthen your immune system. And for good reason: taking proactive measures to boost your immunity is imperative.

The good news is, the key to keeping your immune system strong is right in front of you: on your plate, and in your pantry or freezer. “Good hygiene, getting adequate sleep, and eating a well-balanced diet all play an important role in preventing and increasing resilience to infection,” says Anisha Patel, MD, MSPH.

A healthy immune system relies on a balanced variety of vitamins and minerals over time, which is why it's so important to ensure consistent, positive eating habits. Your immune system is exactly that, a system, which requires ongoing care and maintenance to function well.


Increasing fruits and vegetables and reducing added sugar, are all part of a healthful, balanced diet. While no one vitamin is the star of the show when it comes to immunity, boosting vitamin C and probiotics can help to support recovery from viral infections. Vitamin C supports immune system function and iron absorption, and because your body doesn’t produce or store vitamin C, daily intake through the foods you eat is a top priority.

We sat down with Jennifer Tyler Lee, author of Half the Sugar, All the Love: 100 Easy, Low-Sugar Recipes for Every Meal of the Day, to learn three easy ways to eat more vitamin C (and less added sugar) in our home-cooked meals.


1-Whirl up breakfast smoothies.

Smoothies are a deliciously simple way to work more vitamin C into your breakfast routine. “Strawberries, oranges, and mangoes are good sources of vitamin C and make for easy smoothie add-ons,” explains Tyler Lee. For instance, a Strawberry-Peach Smoothie contains 70 percent of your recommended daily intake of vitamin C, with no added sugar. Ready to take it up a notch? “Give it an extra boost by using oranges instead of peaches and increase vitamin C to 113 percent of your recommended daily intake. It’s an easy swap,” she says.

Faced with potentially extended periods of social distancing and the need to cook more simple meals at home, it’s a good idea to keep your freezer stocked with frozen fruits and vegetables—and to get kids involved. “A fun activity for kids is to let them measure and portion their favorite smoothie ingredients into individual glass containers that you can store in your freezer for quick and easy grab-and-go smoothies,” says Tyler Lee.

2 -Cook with Brussels sprouts, broccoli, and spinach. 

It’s not just the obvious citrus fruits that give you a boost of vitamin C. “Brussels sprouts, broccoli, and spinach are solid sources of vitamin C, too,” advises Tyler Lee. So let’s bring on the salads and sheet-pan dinners that pack all the roasted veggies.

This vibrant Mason Jar Salad hits all the right notes. “The leafy green vegetables make this salad a great way to power your immune system," says Tyler Lee. "It delivers 130 percent of your recommended daily intake of vitamin C." Plus, you can make it ahead. “I prepare this salad on the weekend, and store it in mason jars in my fridge, for a quick lunch on busy days,” says Tyler Lee.

If you’re ordering your salad at a restaurant, ask them to swap the grains for more leafy greens as an easy way to give your meal a boost of goodness. You can also make some easy swaps when cooking at home. “Try adding Brussels sprouts or broccoli to your stir-fries, or adding spinach to your favorite baked ziti or lasagna recipe, for more easy ways to give your regular meals a boost of vitamin C,” she says.


3 -Make DIY strawberry popsicles for dessert.
Dessert can be a good source of vitamin C, as well. A cup of sliced strawberries can be a delicious and simple dessert all on its own and delivers 130 percent of your daily recommended intake of vitamin C. 8 food items that were invented by mistake

Did you know potato chips were the result of a mistake?

People who dedicate their lives in inventing something face a lot of difficulties than we think. We have examples of Einstein and Edison who failed multiple times before succeeding in what they were inventing. But not all experiments have to be as tiring and disappointing as not being able to light a bulb 1000 times. Like every other thing on this planet, food was also invented and has evolved from time to time. New dishes and ingredients are being invented and researched every day. Sometimes out of apathy and sometimes out of sheer luck. But the food industry has also seen its shares of ups and downs and in the process of creating delicious cuisines, people have committed mistakes and thankfully, some of them are as delicious as potato chips. Yes, potato chips is a result of a frustrated chef’s dire need to satisfy one of his customers. There have been many such foods that we can’t imagine our survival without were invented by mistake.


Potato chips
Created by a man called George Crum, potato chips were first invented in 1853. Crum worked as the head chef in Moon Lake Lodge in Saratoga springs. The restaurant was famous for serving fries and one customer complained about the size of the fries to be too thick. Crum made another batch for him with thinner pieces but he was still fussy. So, out of frustration, Crum decided to make slice as thin pieces as possible and fry them. Not only the customer loved them but the world knows them as the best snack, our favourite potato chips.


Coca-cola
As a part of an experiment to create an alternative to his cocaine addiction, John Pemberton, a wounded veteran sought to create this drink. He created a tonic in his pharmacy with little amounts of cocaine along with caffeine-rich Kola nut. It was bought by Asa Candler, another pharmacist, for $2,300 who added soda to it to increase bubbles. Coca Cola became the most loved fountain drink of America by the late 1890s.


Popsicles
Made by an 11-year-old in 1905, popsicles are one of the most loved treats among children even today. Frank Epperson left his soda making equipment on his porch overnight with a mixing stick stuck in it. He woke up to the most delicious surprise the next morning. After 17 years, he started selling it with different flavours and the treat soon became an instant hit.
 

Sandwich
Many legends revolve around the making of the sandwich but our favourite one is when a guy named John Montagu couldn't leave intense gambling round, to think clearly, he ordered meat stuffed in two pieces of bread. Some people also believe that his work did not allow him to get up often, so he prepared a meal that would take the least number of utensils and can be eaten without getting hands dirty.
 

Champagne
Although the creator of one of the most consumed drinks is unknown, champagne was invented in the year 1490. It was created from the champagne wine and during the fermentation of the wine, it started producing bubbles which were not seen as a good sign. The temperatures of the champagne region started to rise, creating a shorter growing season. The heat in the environment leads to the production of bubbles at a rapid pace which causes the fermentation process to take place twice within the same batch. With this, the produce of the bubbles increased so much that it would force the corks of bottles outside and the bottles exploded. After the bubbles were controlled after a certain level, the product that came out was amusing and is now called champagne.

Kellogg’s corn flakes
Will Kellogg, one of Kellogg's brothers, invented the cornflakes in the early 1900s. While trying to create a healthy granola treat for his patients, Will and Harvey Kellogg accidentally created flakes out of wheat berry. So, Will Kellogg kept experimenting until he succeeded in flaking corn. Now we know them as famous breakfast cereal, corn flakes.


Ice-cream conesThis one was created out of an act of kindness. Ernest Hamwi participated in St. Louis’ World fair where he was selling waffle-like pastries called Zalabis. His neighbour was selling ice-cream and soon ran out of plates. So, to help him, he made cones out of Zalabis that could contain the ice-cream. This soon became a hit with the customers and now ice-cream is incomplete without a cone.
 

Worcestershire sauce
A British governor of Bengal called Lord Marcus Sandy came back to England in 1838 and was craving for a special kind of Indian sauce. So, to attend to his craving, a sauce was made with the same ingredients and taste that he described. The sauce was not sold in markets for a long time because of its stench but once it made out, there was no looking back.

Effective Home Remedies for an Aching Throat

The throat itches, is swollen and burning, and even the simple act of swallowing becomes a scary prospect? You're not alone! Throat aches are some of the most common phenomenon as we move into the winter season.

Here are 10 ways you can calm that aching throat down without having to go see a doctor:
 
1. Keep your nasal passageways open
 
Doctors agree that two of the most common causes of throat pain are the buildup of snot and dryness, that occur mostly from breathing too much through the mouth when the nasal passageways are closed. 

There are materials that fight nose congestion, especially those containing Pseudofrin (no need to doctor's note) which will help open the nasal passageways.

Using nose sprays (with a salt water solution) may also help keep those passageways open and breathing easier.

2.  Home remedies to gargle with:

Salt Water: This is the old favorite, and you can create it by mixing 1/4 teaspoon of salt in 1 cup of warm water (the warmer the better, within your tolerance levels, don't let it get cold or loses effectiveness). If you have it at home, this is a good time to add 1 tablespoon of Listerine for its germ killing benefits. This you gargle several times a day, and will help you to rinse and neutralize acids in your throat. You will notice that the burning sensation is going down and the area will usually start to heal. Don't let up on the gargling.  
 
Raspberry Tea: Pour a glass of boiling water on 2 tea spoons of raspberry dried leaves, soak for 10 minutes and then filter. You can add 1 tea spoon of apple vinegar and/or honey, and then gargle 4 times a day.

Sage Leaves: Mix 1 spoon of sage leaves with 1 cup of boiling water, soak for 10 minutes and then filter.  You can add 1 tea spoon of apple vinegar and/or honey, and then gargle 4 times a day.

Turmeric: For a burning sensation in your throat, mix 1 cup of boiling water with 1/2 a spoon of turmeric (anti inflammation) and 1/2 a spoon of salt. Gargle twice a day. If you hate gargling, you can also mix 1/2 a spoon of turmeric with 1 glass of hot milk, and slowly sip it.
 
Hot sauce and water: Hot peppers containt a material called capsicum which alleviates pain and reduce inflammation. You can prepare this by grinding a cayenne pepper and adding 5 shakes of the ground material to a cup of hot water. Warning: it WILL burn, buy try to gargle this every 15-30 minutes and see if it does the trick. 


When the body is aching and weak, logic dictates that you rest. Same goes for throat ache. It's very important to save up your energy, to allow the body to fight the infection. If the throat pain doesn't require medical attention, resting will help cut down the healing time.



3. Rest
 
What does resting have to do with a sore throat? A lot. While you rest, your body has more energy to fight the infection in your throat. If you've taken some of our home remedies, be sure to rest between to give your body a fighting chance.

4. Vinegar

A useful home remedy based on apple vinegar: Take 1 cup of hot water and mix 1 table spoon of honey and 1 table spoon of apple vinegar.  Sip slowly without letting the liquid cool down. Drink as often as possible.

For gargling: Mix 1 spoon of salt, 1/2 a cup of vinegar and 1 cup of hot water. Drink every 15 minutes as needed. 

* Be sure to melt the salt in the vinegar before adding the water.


5.  Horseradish Cocktail

 

A traditional Russian remedy: Mix 1 cup of hot water with 1 table spoon of pure horseradish (or a horseradish root) with 1 table spoon of honey and 1 table spoon of cloves. Sip slowly over the course of an hour.


6. Citrus Fruits

Lemon Juice: Mix 1 cup of hot water with 1 table spoon of honey and 1
table spoon of squeezed lemon juice. Sip slowly.

Lime Juice: Mix 1 table spoon of lime juice with 1 table spoon of honey in hot water, and drink as needed.


7. Steam 

An old remedy for an aching throat is a steam tent. Sit with your face over a steaming bowl of hot water and cover your head with a towel to keep the steam in. Add 1-2 drops of Eucalyptus extract for a much greater help.


8. Lozenges

Some doctors say that sugar can help reduce throat ache and accompanying cough, but even Lozenges without sugar can calm down an aching throat by keeping your mouth and throat moist, which will make you feel less pain.

9. Popsicles

An ice popsicle can calm down a burning throat. Make sure you aren't sucking on the popsicle, but cutting small pieces and letting them melt in your mouth.


10. Drink plenty of liquids

This may go without saying, but when you suffer from an aching throat, you should drink at least 8-10 cups of water a day (preferably not cold water). This will keep your throat well oiled, will prevent the dry feeling you get and even aid the fight against inflammation.
