What is kosher salt and why everyone is talking about it?

Everything you need to know about Kosher Salt

Have you ever wondered how bland the world of food would be if we had not discovered salt? Salt is one such ingredient that not just adds the maximum taste to our food but also elevates other flavours and helps everything taste better. Apart from being an integral ingredient for food, it has a lot of medicinal benefits like helping the body in maintaining thyroid levels, preventing low blood pressure, keeping the body hydrated. Did you know that there are more than 10 varieties of edible salt? While the most commonly used amongst all the varieties of salt is our regular table salt, Kosher Salt is now becoming the talk of the town. To find out what is Kosher salt, read on:

What is Kosher Salt and how is it made?
Every kind of salt found is a naturally occurring substance that is generally harvested from seawater and rock salt deposits in mines made of salt. To get a step ahead to achieve the final product, water has to be completely evaporated from seawater salt and brine the rock-salt by pumping water on these rocks. Once the salt is clean, its crystals can be used in many ways. Kosher salt is a kind of salt is gained from these crystals. The texture of this salt is coarse and it is generally not iodised. This is one of the major reasons why people are preferring to use Kosher instead of regular, table salt. The structure and texture of the salt might depend on particular brands and also on the production.

How was the name derived?
The word ‘Kosher’ is used for food that is cooked according to Jewish dietary laws. So, technically, almost everything can be Kosher and every salt produced can be Kosher if it is cooked or made in Kosher supervision. But the idea behind its name had nothing to do with the Jewish Laws of cooking. The word Kosher signifies cleanliness and Kosher salt was first used to brine meat. So, it was quite literally Koshering the meat by making it free of any parasites or blood. With the process, the name stuck with this flaky variation of salt.

How and when to use it?
Kosher salt, if measured correctly, is usually lighter than table salt or the regular salt that we generally use in our households. So, if the quantity of the salt isn’t mentioned in any particular recipe, it is advised to use your judgement. The reason why most people these days are inclined towards using Kosher salt is that it is lighter and distributes easily all over your food but has a little difficulty in dissolving and that is when table salt comes to use. The versatility of Kosher salt mas made its demand rise even though the final product will end up tasting just the same as any other food cooked with regular salt. You can use it in a recipe where it asks you to use ‘coarse salt’. The main purpose of it is to either brine or give your food final seasoning.

5 Ways To Subdue Itching Of The Skin

Skin irritants are everywhere. Even in your house, there is practically no place where there are no skin irritants. Laundry detergents, air fresheners and floor polishes are just a few factors that cause skin itching.

The reason why this happens is that products like air fresheners and floor polishes take away essential oils and water from the skin which leads to dryness and irritation. This type of dry, itchy skin can also progress to skin conditions like eczema.

Here are some ways you can stop your skin from becoming dry and itchy:
1. Wear gloves
The ideal thing to do would be to wear soft, thin cotton gloves and only wear rubber gloves on top of that. Do not touch a bucket or sponge without it. Even if you cannot wear soft, thin cotton gloves underneath, at least wear the rubber gloves as this protects your hands from irritants.

2. Rinse after swimming
Chlorine is one of the principal causes of itchiness in your skin. It is absolutely essential that once you have finished swimming you rinse your body with water and a little soap. Even more importantly, use a moisturizer with glycerin in it, as this will keep the moisture trapped inside. Glycerin is particularly good at holding on to moisture.

3. Petroleum jelly
Petroleum jelly has been proven to reduce the chances of dry, itchy skin because it contains only one ingredient. This one-ingredient formula is especially great when it is applied to sensitive skin. The reason why one ingredient is better than a moisturizer with many chemicals is that a one ingredient formula is gentler and therefore creates a protective barrier against irritants.

4. Oatmeal baths
For this kind of treatment, grind oatmeal in a blender and then sprinkle it in your bath water. Oatmeal has an anti-inflammatory substance known as avenanthramides which decreases itching and redness of the skin.

5. Cleanliness
This is perhaps the most important tip which can be given. If you do not clean your floors regularly or wash your bed sheets in hot water than you are at a high risk of getting mites and these are one of the most common irritants of your skin.

Cleanliness could be a health hazard, researcher says

Providing clean water to everyone on the planet has been a major health goal for decades, but scientists have warned that while it reduces the chance of catching a deadly disease it could also increase the risk of asthma.

Speaking at the annual meeting of the American Association for the Advancement of Science in Boston, Dr Brett Finlay suggested the obsession with hygiene could even be turning some beneficial bacteria found in the human gut into “endangered species”.

In a study in Canada, the researchers had found the presence of four types of bacteria in the gut of babies less than 100 days old seemed to prevent them from developing asthma in later life.

They then decided to see if the same was true for children elsewhere in the world and settled on Ecuador, where about 10 per cent of children have asthma, for their next study.

They found the same protective effect of the four bugs, but also two unexpected factors that increased the risk of the condition: a particular type of yeast in the gut and access to a clean water supply.

Dr Finley, of British Columbia University, said: “Ironically the kids with clean water had a higher risk of asthma.

“I guess it makes sense [because of the lower levels of bacteria] but I must admit we were surprised to see that. You’d think clean water is good for the world.”

The hygiene hypothesis has emerged as one reason to explain the rise of asthma and allergies in the developed world.

But despite this Dr Finlay, author of the book Let Them Eat Dirt, said too many people still felt the need to kill bugs and urged them to throw away their anti-bacterial wipes.

“I would say we’re suffering from a hygiene hangover. We have cleaned the world up too much,” he said.

“Maybe these microbes are actually an endangered species — your great grandkids are going to have different microbes than you do.

“There are people biobanking things — I’m not suggesting you should biobank your poop now and give it to your grandkids …. I don’t know … I worry we have got too clean and we have got to ease off a little bit.

“We have evolved with these microbe all along.

“I do think we have to rethink this absolute war on all microbes — ‘kill them all, carpet bomb them’ — I think that’s wrong.”

However, he stressed there were benefits to being clean.

“Hygiene works — we have got rid of infectious diseases, no doubt about it, but this is a consequence of that,” he said.

“Certain microbes fix one condition but make another worse … so it’s complex.”

While the role of gut microbes in human health is now widely accepted, Dr Finlay said when they first suggested a link between their make-up and asthma “people thought we were from Mars”.

“These microbes in the gut are setting the immune system up and different parts of the body talk to each other,” he said.

But now research was increasingly pointing to the role of fungi like yeast in the gut and even “the other elephant in the room”, viruses.

“This is just a wake-up call — we have to think about more than bacteria,” he said.
