HEALTH BENEFITS OF GHEE / CLARIFIED BUTTER
Ghee is a common household item found in all Indian kitchens. Mothers very patiently collect the cream/ malai from the milk which is boiled daily, it is stored in the fridge, stirred every other day adding little curd. Once enough malai is collected, it used to be churned by hand to get butter and buttermilk. With the improvement of technologies, either you put the cream in a blender and use whipper to take out butter or use a hand blender to do the same ! I used to love the fresh butter spread on bread and sprinkle little sugar to eat. In Mumbai, this fresh butter used to be spread on sweet buns and sold- called bun maska ! This butter, when melted over medium fire becomes ghee, which is used in making desserts, on top of rice, roti, naan, paranthas and in making sweets and namkeens ( savory snacks).
Health benefits of ghee-
1. Boosts digestion: According to Ayurveda expert, "Ghee is one of the most easily digestible fats used for cooking. Ghee is a natural remedy for balancing the heat element (pitta) of the body. It aids in digestion, prevents constipation and helps in the excretion of toxins. Having half teaspoon of ghee with moong dal khichdi is a great way to detox."
2. Helps in weight loss: Celebrity Nutritionist explains that the type of saturated fat that Desi Ghee has is the short-chain-fatty acid. This helps to burn the stubborn fat in the body while regulating your metabolism.Ghee is higher in conjugated linoleic acid, an unsaturated fatty acid, which causes fat loss.
3. High smoke point: Desi ghee has a high heat point which means that it doesn't burn easily while other oils may break down and release free radicals when heated at high temperatures. Free radicals are unstable molecules that can cause damage to your cells and also increase the risk of disease. Moreover, Indian cooking requires a lot of sauteing and therefore, it is better to use desi ghee which won't breakdown easily.
4. Balances your hormones: According to another Nutritionist and Health Practitioner, "The fat content in our body is mostly saturated fat and only 3% coming from other types. This ratio is absolutely important to know for our health and well-being. This prestigious golden elixir is rich in Vitamin K2 which builds hormones along with Vitamin A, D, E & K."
5. Strengthens immunity and helps in bone development: As kids, we were given a spoonful of desi ghee daily to boost our immunity and make our bones strong. Desi ghee acts as a strong microbial, anti-cancer and antiviral agent. It is a rich source of fat soluble vitamins that help in growth and development of the bones.
6. Good for your heart: Vitamin K2 found in desi ghee helps in preventing calcium deposits in the arteries that can lead to blockages and obstruct blood flow. It lowers bad cholesterol levels and increases good cholesterol levels, thus maintaining a healthy balance.
7.It is less toxic than oil
When cooking on high heat, ghee produces much less toxic compounds than vegetable and seed oils. According to a study, soybean produces more than ten times as much acrylamide as ghee when heated to 160°C.
8. It does not spoil easily
Ghee does not require refrigeration and can be stored at room temperature for several weeks. And since its milk solids have been removed, it does not spoil easily.
9. Healthy digestive tract
Studies suggest that since ghee is more concentrated than butter, it provides a little more butyric acid and other short-chain saturated fats, which reduce soreness and support gut health.
Desi ghee is a better option than commercially processed butter as it has a lower fat content. So, don't be afraid to use it but remember that pure desi ghee is always made of cow's milk. If you're picking up a jar of desi ghee from the supermarket, be sure to read your labels.
