By now we all have understood how important it is to make sure that we are getting adequate levels of vitamin D. From boosting immunity to keeping our mental health in shape, vitamin D supports our health in more ways than one. While there are not many foods rich in vitamin D, taking a supplement is a safe way to ensure that you are getting recommended levels of vitamin D (in case your levels are low). However, new research has found that one-common plant-based food may be able to provide you with the daily recommended value of vitamin D.
The research
In
the journal Food Science and Nutrition, it was found that the addition
of mushrooms to the daily diet can help increase vitamin D levels in the
body. The researchers examined white, crimini, portabella mushrooms at a
1:1:1 ratio. One scenario included UV light exposed mushrooms and
finally one scenario including oyster mushrooms.
The results
The
study evaluated the health benefits of each type of mushroom given to
people aged between 9-18 and even 19+. Each group was asked to eat 84
grams of mushrooms.
It was found that mushrooms increased the dietary fibre, copper, phosphorus, potassium, selenium, zinc, riboflavin, niacin and choline levels.
The biggest discovery was that mushrooms that were exposed to UV light, eating just one serving of these helped people either meet or exceed their recommended daily value of vitamin D.
So, next time you go grocery shopping, do not forget to pick a packet of mushrooms that say enriched with vitamin D.
Alternatively, you can also put fresh mushrooms in the sunlight for a few hours to enrich them with vitamin D.
